Veggie aubergine recipes

I have one medium size aubergine which needs using up, for a veggie dinner for two tonight. I have loads of spices, onion, garlic, and other store cupboard stuff. If I can avoid leaving the house that would be ideal. I am completely out of ideas but open to most types of cuisine. Any brilliant suggestions please?

Roast aubergine and pepper pasta is a good one!

Roast peppers & aubergine in oven.
Use veg stock, chopped tomatoes, sundried tomato paste (if you have), basil, chives, pine nuts (if you have- I usually dry fry before anything for a couple of minutes then remove and add at the end), garlic and cheese to go on top. Mix it all up; stir in the roast pepper & aubergine and pasta and add cheese & chives on top to serve.

I usually adapt the recipe to what I have too, adding in mushrooms, taking things out that I don't have!

One of my friends makes the most delicious aubergine Bhaji which she serves with Biryani. It’s really simple to do if you have a good variety of spices.

If you have some cheese, cut the aubergine in half, put it in the oven on a tray on a moderate heat eg GM6 or 200F, cook 40 minutes then grate or slice cheese all over the two portions and cook for another 5-10 mins.

Serve with whatever else you have in store like salad, tinned beans, rice.

Do you have tinned tomatoes?

Sauté your onions and garlic, then pour in tinned tomato to make a sauce, add salt and herbs, cook.

Meanwhile slice your aubergine put it under the grill or in the oven. After the aubergine has cooked, pour the tomato sauce on it and share out.

Serve with whatever you have, salad, rice, chips or potato.

Score it and roast it with soy sauce, garlic, chilli, tamarin, honey, maple syrup, spring onions, squeeze of lime, oyster sauce combination (doesnt matter if you dont have everything, I do a different combination everytime and its always good). Serve it with rice or noodles and whatever other green veg you've got stir fried or roasted too. If you have any other veg like peppers, tomatoes and courgette, chop it all up, bung in a baking dish with olive oil, basil and garlic. Roast for about 35 minutes. Mix some cheese (preferably feta or mozzarella in, top with breadcrumbs, parmesan and seeds and stick it back in the oven for ten minutes.

I do an extremely easy and presumably inauthentic but tasty city with aubergine. Prick it a few times and hung out in the oven for half an hour (preferably with time to cool so you can chop it without scalding yourself). Fry onions with cumin seeds. Add garlic, medium curry powder, the chopped aubergine, a tin of chopped toms and salt/pepper. Cook hot with a lid on for 5 mins and then turn the heat down and uncover for 10 mins. Serve with rice. Is yum and quite healthy due to not much oil. I often chuck some cashews in for protein.

You can add any sides you can make from what you have - green veg with garlic & chilli, soft boiled eggs, fried tofu etc.

do a ratatouille but add it to a pasta (shell is good) and cheese sauce, combine together and bake in oven 20 mins.

add garlic bread if wanted.
