Chicken in white wine sauce

Would anyone like to share a tried and tested recipe? I made it the other day and the proportions were 1 cup of stock and 1/2 cup white wine. The sauce was lacking, and I wondered if it needed more wine and less stock?

What else was in it, apart from chicken, chicken stock & wine ?

300ml double cream
3-4 onions finely diced (if small ones)
1 glass bottle of white wine
300ml hot water with 2 chicken oxo cubes dissolved.

Fry onions until lightly browned
Pour in all wine and boil off until there’s just a browny gloop in the bottom
Add chicken stock
Leave to cool
Once cooled, add double cream and chicken
Slowly cook until sauce has thickened and reduced slightly, and chicken is cooked. I normally leave it on the hob on 1 for 2-3 hours, stirring occasionally.

I hotchpotch made this recipe up, but I’ve cooked it plenty of times and we’ve always enjoyed it anyway 😉

Fry onion and garlic
Add wine and simmer for 10ish mins to burn off alcohol
Add cream
Back pepper
Sauce done

I usually cook the chicken separately and add at the end.

Stock cubes only. Don't dissolve in water. They will dissolve in the wine.
