My fridge is over loaded with parsnips

potato, leeks and carrots - has anyone got a recipy for a good parsnip soup?

Also looking for a recipy to use up the leeks, flan or bake? any recipy gratefully received.

I also have cream, double and single, blue cheese cold chicken so any ideas??

Leek and blue cheese quiche is nice. Have any apples? Parsnip and apple soup is my favorite!

Chop onion and fry in a little oil for about 5 mins (low heat - don't brown it) then throw in some curry powder (maybe a tsp?) and stir in. Then add peeled chopped parsnips, cover with stock and simmer for a while (half an hour?) till soft. Blitz with hand blender and add more curry powder/season if required. Sorry to be vague but I just throw it together!

Leek and potato soup is also yummy and probably would be extra nice with a bit of blue cheese melted in at the end. And you can always freeze soup.

use parsnip, apples and veggie stock to make soup. leeks will add a bit of bite to that too.

also potato, parsnip and carrot rostis - grate, shake in flour and fry - go down brilliantly with kids too

If you still have parsnips left after all these recipes par-boil them, drain and shove in the freezer. Ready-made for roasting then.

parsnips work well in a risotto - slice thin, and stir in some parmesan at the end.

parnsip crips is a firm favorite in the pickie household. Just use a peeler and peel strips of parsnip, coat in oil, pepper and a little salt, place on a baking sheet (oven on 2)and turn over after 5-10 minuyes and take out when crip. Also works with beetroot and carrots

Boil sliced parsnips in milk when soft mash them up in the milk add butter and a little grated nutmeg. Delicious and an Elizabethan Dish.

oooh, what's that in electric. not as high as i'd have thought, certainly. how crisp are they? do they stay chewy?

sorry have no idea,s low roasting maybe 100c? Very crispy like normal crisps. Dont know if they last as they always get eaten quickly!

mash up boiled parsnips and put them in a roasting dish with some cheese sprinkled on the top. Put in the oven for about 10 mins MMMMMMMmm

Par boil them and then freeze them - you can use them for roasting with sunday lunch then!
