Meals with mushrooms as an ingredient when you don’t like mushrooms

I have 400g mushrooms left over after Ds1 had a few on his pizza. However none of us really like mushrooms and now I dont know what to do with the rest of them. I don’t really want to make a bolognese as I have so much of if in the freezer already.

All ideas welcome! We like most things, just not broccoli, cauliflower or eggs. Any and all Italian, Indian, Chinese, Thai etc, but don’t want to taste the mushrooms very much as we don’t actually like them!

whenever i've got loads to use up I make mushroom soup - because its soup it doesn't have the mushroom texture.

I also use them to make stroganoff, chicken and mushroom pie, or chopped finely to bulk out shepherds/ cottage pie etc.

Mushroom curry - finely chop a large onion, chop up mushrooms into bite sized pieces, sauté both, add 2 large spoons of pataks curry paste, I like tikka masala, fry for a minute then add a cup of water and simmer and reduce to a thick curry. Add chopped coriander at the end. I serve with chicken tikka drumsticks and aloo gobi

These mushroom and walnut samosas from Meera Sodha are delicious. The original recipe calls for nigella seeds rather than mustard seeds, but otherwise looks the same. The mushrooms are blitzed in a food processor so if it’s a textural problem then that removed that problem.

I am with @caranations - don't eat them but rather give them away.

Alternatively, DS will be enjoying lovely mushroom based dishes until his mushrooms are finished! Grin If he likes mushrooms, what about mushrooms on toast for breakfast / post school snack for a day or two?

I think those samosas would taste fantastic. I have leftover walnuts so that would be perfect. Ds doesn’t like mushrooms either, he is just trying to be healthier and reduce his red meat consumption, so asked for mushrooms and peppers on his pizza instead of jam and pepperoni. He didn’t want 400g of them of his pizza though!

Cook them with some onions, garlic and herbs. Mix with cream cheese and whizz with a hand blender. A really tasty pate and you won't taste the mushrooms so much.

Also if it is the texture of cooked mushrooms you don't like, try a tiny slice raw - it's a different product and good in salads
