How do I Cook this turkey crown

I've followed Nigella (after watching Gavin and Stacey) and she's in her bath for the next 6 hours.

It's a Turkey Crown and weighs 9lb exactly.

How do I Cook so it's juicey.

(here it is in the nigella brine)

Rest it. At 9lb you can rest that for an hour to two hours and it will still be warm. Just wrap it it lots of foil then tea towels.

I would cook at 180 for 2 1/2 hours but skewer it to check it's hot throughout.

I also have these cooking bags which say they keep keeps it really juicey. But it also says it reduces the cooking time...

So it says it cooks it 10% quicker but I don't know what that means. They turkey crown is 9lbs. Can anyone advise me?
