I googled and some say no due to the low temp but then there's loads of recipes!

I think it would be fine as long as it is properly cooked when you eat it and has reached boiling point for a while.

I think I would be more hesitant if it were pork or chicken but we eat beef rare anyway! But I am planning on slow cooking it thoroughly and I have a meat thermometer.
