That's it really searching out some ideas, I have in mind a version of Blackforest gateau or Blackforest triffle but would really value some ideas. I think Sainsburys did a recipe card a couple of years ago with a cheesecake for some boozy satsumas anyone got it? Might be somewhere to start...

An open flan.
Take one sponge flan half fill with creme anglaise (custard) place sliced/quartered fruit on top in a pretty pattern and make a glaze/jelly with the juice and geletine, pour over, leave to set, then drool.
