One that gives me big American-style muffins. Where i can add bits of apple/ blueberries/ banana/ dried fruit etc.

There are so many recipes out there but anything I've tried tends to come out more like fairy cakes - nice but not what I'm after.

Does anyone know what I'm looking for?

I found this one excellent. Do not overmix!

made these [[https://www.bbcgoodfood.com/recipes/banana-blueberry-muffins]] the other day. They were pretty good.

I do have a recipe I'd have to take a picture of for carrot muffins. They're american style in that they are less cake-like. They also freeze well. If that appeals. The recipe includes some dried fruit etc which I assume you could change up as per your preference.

Sorry, not sure what happened there: these

We love these, and I have added blueberries, pineapple, cranberries, raisins etc. i have also added various nuts and coconuts.

They use chopped dates as the main sweetener, plus bananas.

They may not be what you want, but are very good. I make mine smaller than the recipe calls for.

They freeze beautifully.

I use this basic muffin recipe and add whatever I have in:
2 eggs, beaten 250g caster sugar stirred in
250ml milk and 125 ml vegetable oil mixed then stirred in
400g self raising flour, sifted and folded in (don't overmix)

Add 100g choc chips
Or raisins
Or blueberries -whatever you have in. Bake gas 6 /200 electric for 15-20 mins - makes 18 to 20 muffins.

I use a muffin tin with cases and put one ice cream scoop of mixture in. Can be in oven within 5 mins makes nice mounded muffins.
