OK, here's something I did earlier that went down well at xmas:
Brussels Sprouts with Pancetta and Black Truffle oil
750g sprouts, boiled then drained then halved
100g pancetta cut in to cubes or bacon lardons
black truffle oil
olive oil
red wine
half a red onion finely chopped
salt and pepper
brown sugar
serves 10
in some olive oil saute the onion, and the pancetta and turn up the heat to fry until crisp. Add a glass of red wine, a dessert spoon of brown sugar, a little salt and a generous amount of black pepper. Reduce to half the volume, through in sprouts and coat with sauce.
