Leftover "sausage" roll filling

Made some vegetarian sausage rolls but the pastry was a bit small and I have filling leftover, what could I do with it?

It's made of walnuts, herbs, cheese, oats, breadcrumbs and eggs.

Or use to make a burger, or ‘meat’balls.

Use it as some kind of savoury crumble topping? Add flour if it's not the right consistency.

So many good ideas, so glad I didn't chuck it now!

Will it keep in the fridge OK to be cooked tomorrow even with the raw egg? DC are finally settled in bed and I just want to lie down on the sofa in front of the TV now!

Will probably go for meatballs/patties or stuffed mushrooms!

If you're not vegan & decide to do the mushrooms, add a knob of garlic butter on top as you cook them. It's divine.
