I've got a mountain of cooked roast beef that I cannot freeze again - WTF to do with it all?

The joint was cooked and frozen (not by me!), thawed, sliced and is in my fridge. I REALLY don't want to waste it?

What an earth can I do with it? Don't really fancy roast beef dinners every night for 2 weeks...there really is loads of it!

Any ideas gratefully received

There was a roast beef thread yesterday - I suggested slicing the beef into slivers and making beef in black bean sauce and serving with rice etc.

Someone else was making a Thai salad which sounded lovely.
