Plant based but low carb cookbook?

I've gone down a rabbit hole and don't know what cookbook to buy. Is wanting to do plant based and low carb too hard? Would so appreciate any cookbook recommendations to buy.

It would be hard to full keto low carb, but that’s not healthy long term anyway.

You can certainly do lower carb and be vegan, by focusing on complex carbs and eating more veg. Hugh FW’s books are good. Some people like the green roasting tin book.

I've been enjoying the Ottolenghi Test Kitchen cookbook that just came out called "Shelf Love" - it's not vegetarian but it's very plant-based, and most recipes are pretty low carb!

Before buying a cookbook, I’d try out some online recipes first to see what kind of recipes you enjoy from this way for eating. Then when you know more about what you are looking for, you’ll have a better steer on what you want. There’s a vegan keto subreddit, which might give some inspiration as well.

Haven't found one. All the veggie cookbooks I seen seem to think it's ok to put eggs on toast in as a good recipe. Blatant rip off..lol

Have you looked at Joe Wicks' Veggie Lean in 15 recipe book? It's not low carb but there are some good recipes and it's healthy stuff.

Rose Elliott did a vegetarian low carb book if that is any help? Quite old so may not be what you want.
