Need something yummy that can be eaten cold at a bring-and-share... was thinking along the lines of this halloumi pie thing but have made that a lot recently

Any suggestions welcome, particularly if they are simple to make!

My kids loved Alison Roman's courgette pasta salad (more veg than pasta - has nuts and cheese too)!

A few other ideas:

Ooh that strata thing looks interesting! Is the bread likely to be/go soggy, though?

Pesto pasta salad with pine nuts, cherry tomatoes and mozzarella pearls
Tortilla quiches - perhaps a few with different fillings

Oh the bread is supposed to go soggy at first, you actually leave it overnight in the fridge to soak up all the eggy creamy cheesy loveliness and then bake it off the next day! Once it's baked the bread is that perfect bread puddingy texture, it is perfect either warmed up or at room temp for literally days. It's a great one to make the day before an event because you do all the work the night before and then just stick it in the oven the next morning, it cools down and then you take it to your buffet and it cuts neatly into squares for serving.

These are always the first thing to go at a party! Basically halloumi in puff pastry but with a few extra twists that make them delicious!
