Bean burger disaster

chimichangaz · 10/01/2022 18:33

I've made the Michael Mosley skinny bean burger recipe, and the mixture didn't stick together at all. I ended up just moving it round the pan so it got cooked through and now it looks like (very dry) cooked mince! Sort of a hash.

I'm trying to go low carb, has anyone any idea how I can rescue it?! I did think about adding baked beans to it and topping with mash, very obviously not low carb but at least it wouldn't be wasted!!

Don't know the recipe, & couldn't find it without wading through a lot of crap.
The usual way to bind burgers with insufficient fat is to use egg.
Could that be the problem?

Have you got something like ratatouille or even a tomato based pasta sauce available? Stir the bean mixture into the sauce and warm through for quick bean casserole? Should be edible, but won’t win any food stylist prizes!

@Georgyporky yes, the recipe had an egg in it, to bind it. However it turned into a sticky, squidgy mess rather than having some 'bite' to it!! The mad thing is - I think I made this before, a few years ago, and the same thing happened! 🤦🏻‍♀️

Have now crossed it out in the book......

@AdaColeman that's another good idea! I'll have a furtle through the cupboards tomorrow and see what I've got!

Not much help in terms of recipe, but if you do want to low carb, be careful with beans. Am doing keto and most of them are off limits, much to my dismay!

I use an easy recipe that makes a huge batch so I can freeze lots for another time. Very tasty and great consistency.

@Artesia that's a surprise! But anyway, these burgers are a huge improvement on my current bread/potato/pasta diet......

@Pixie0437 thanks - that one looks good and I'll definitely give it a go!

I made these sallysbakingaddiction.com/best-black-bean-burgers/ today. The mixture was too wet to shape, even with more breadcrumbs, but fine once chilled and then tipped on to a floured board. They cooked nicely and didn't fall apart, as have previous attempts with different recipes.

I made these with ground oats instead of breadcrumbs and it was a fairly wet mixture but I shaped them by spooning mixture into a cookie cutter and pressing down. Did that directly onto a tray with an oiled piece of baking paper and it worked well.
