Anyone got a nice pasta bake (veggie) recipe?

Something relatively healthy… I’m just in the mood to throw it all in a dish and shove it in the oven!

Very very easy gnocchi one

Mix a tin of chopped tomatoes and a carton of passata with some garlic granules, black pepper and a sprinkling of chilli powder and a generous teaspoon of dried oregano or marjoram.

Chop up 2 large mozzarella balls and a whole packet of fresh basil. Add these to the tomatoes with half a can of pitted black olives if you like them. Leave a few basil leaves aside for garnish if you like

Add a packet of gnocchi, stir and pour into a baking dish. Top with slices of 3rd mozzarella ball and bake for 45 mins to an hour, medium oven, medium heat. Serve with salad.

Or - chop up chunky pieces of red and yellow peppers, courgettes, red onions, aubergines. Toss them all in a tablespoon of olive oil mixed with garlic puree, thyme, rosemary and mild chilli flakes. Roast in the oven while you cook the pasta. Then drain pasta, stir in a tin of chopped tomatoes, the part cooked veg and transfer to a roasting tin with some grated cheese on top. Bake for 25-35 mins until the top is golden and crunch and the veg have roasted themselves sweet.

My Mum doesn't like mashed potato (I know) so when she makes a cottage pie/fish pie type dish she tops with gnocchi instead (I know!)

I made the pinch of Nom pizza pasta yesterday which was a hit. It does have pepperoni in but would be easy enough to skip!

I've made this before and enjoyed it, but it does need to be prepped on the hob first - though it's a simple recipe. As long as I have mozzarella, I haven't worried too much about making sure I have all the cheese they mention. It works fine with just mozzarella.

Cook pasta. Fry off onion, mushrooms and peppers. Add garlic, tomato purée, a can of kidney beans, basil and oregano, a good splash of balsamic and Lee and Perins. Add can of chopped tomatoes. Allow to reduce a little bit.

Mix veg mixture with pasta, put in oven proof dish, top with cheese and breadcrumbs and bake.

It might not bother you,but just in case you don't know, Worcestershire Sauce is made of anchovies - so not vegetarian.

Apparently you can get a veggie version. Since I’ve never had the ‘real’ type I can’t tell the difference anyway!

You can, eg Hendersons is sort of the same. But Lea and Perrins def contains fish.
Not trying to derail your thread, but I've had decades of 'it's only a bit of chicken stock/can't you pick the ham out /oh, does it contain fish?' !

Anyway I first clicked on your thread as I'm pondering pasta bake for dinner tomorrow. I have a lot of parsnips... can the two combine? Grin

Apologies you are of course right about the L&Ps, I’m not actually veggie so it doesn’t bother me but obviously you need to swap it for an alternative if you are.
