What shall I do with a packet of coconut flakes?

170g to be precise. I have no idea why it is in my cupboard - perhaps one of my teens bought it. It's not something I would normally ever use. But I'd rather use food than bin it.

Can I just fold it into cake mixture? Or would it be dry and crunchy and spill the texture?

What works you do with coconut flakes.

‘Toast’ in a frying pan until lightly browned. Dry frying adds a lovely nutty flavour and works well scattered on coconut rice such as this.

It wouldn’t work in cake mixture, but you could use it as a topping, scattered onto the icing. I’d still toast it, tho, it’s far nicer toasted

I put dessicated coconut (tiny flakes) into muffins, buns and brownies. I like the texture they add. Dh and dc complain about it but when I make half a batch with coconut and half without, they polish off the coconut buns first!

Hi always mix some desiccated coconut into my flapjacks, so if they’re bigger then whizz them up and make some flapjack.

Keep a close eye on it when you toast it, it goes from nicely browning to burnt in a nanosecond

Raw prawns, dip on egg, then the coconut, then fry/airfry. Serve with salad and Cajun marmelade (which you can knock up with marmelade and a teaspoon of cajun spice mixed together)
