What seasons for chicken breast so it doesnt taste like sadness

Grin

Changing how I eat to lose some weight and chicken is featuring highly in my diet right now either with salad or rice and veg which I generally enjoy but it doesn’t taste as delicious at I would like and I’m clearly doing something wrong!

I need some low salt seasoning ideas that pack a punch taste wise

I like tarragon and black pepper with chicken, especially if you team it with mushrooms.

You need to marinate in yogurt.

Chuck your chicken breasts in a sandwich bag with Greek yogurt (natural or skyr works fine too) with a bit of lemon juice, salt and pepper, a couple of teaspoons of cumin and oregano. Fork out and put into a pan when you are ready to cook- the longer the better but 30 mins makes a huge difference

No one should eat salt and pepper plain chicken

I'd marinade it in buttermilk (to make it juicy and tender) and one of those Schwarz mixed seasonings: garlic italian/cajun/japanese yakitori

MintJulia · 07/01/2022 21:42

I think it's best marinated with tarragon and a little white wine and then cooked on a griddle pan. The alcohol evaporates off so don't worry about calories.

Or in a salad in summer with grapes and black pepper. Smile

Marking my spot for ideas as I too and doing a basic chicken/salmon and rice diet 🤣

Shadow1986 · 07/01/2022 21:47

Do you wrap the chicken breast in foil to keep it juicy?
Garam masala is quite a nice flavour with chicken and rice. The body coach does some healthy chicken dishes, do you have his recipe books?

I use Morrisons Chicken Seasoning, it's in a tiny pot with all the other herbs and spices. It's lovely.

nancy75 · 07/01/2022 21:55

You can get bags with a little packet of seasoning, you cook the chicken in the bag. Chicken stays juicy & the oven stays clean - win win!
They do lots of different flavours, will Google to see if I can find them

Pegasussnail · 07/01/2022 21:55

Cajun - just rub a little on. Add some peppers and spring I onion into the rice

Thread chicken onto a skewer and grill (makes it a bit more fancy) use sweet chilli sauce to flavour

Grill and add a bit of relish to the side (eg. Ballymaloe)

I also use peri peri salt but see you can't have salt.

BoreOfWhabylon · 07/01/2022 21:57

Use all these suggestions but with chicken thigh instead of breast.

Michellebops · 07/01/2022 21:58

Check out jd seasonings website for slimming friendly options

IGotHam · 07/01/2022 22:00

Buy chicken thighs instead! Loads more tasty.

Maggi chicken papers are good to have in the cupboard for a quick chicken dinner when you don't want to think.
Tray bakes are good too (check out the Roasting Tin cook books)

MsSquiz · 07/01/2022 22:03

I often use lemon juice, oregano, garlic purée and olive oil. Marinate in a sandwich bag for a few hours and then cook in the oven

IHopeYouStepOnALegPiece · 07/01/2022 22:41

Thank you!
Fab ideas, no more sad chicken! Grin

I meant to say I used to use and LOVE the Maggi bags/papers but moved to a country that does not seem to appreciate the excellence of them!

Marinate in lime juice, fresh coriander and olive oil, plus seasoning. For best results griddle for extra flavour.
