What’s your simple go to veggie lasagne recipe?

Looking to make something different quick and simple for my kids (2&4).

I sometimes make a lasagne with red lentils and veggies which we like.

Not quick but relatively simple I use the BBC good food veg lasagne recipe (you roast the veg then add to the tomato sauce - I usually roast the veg when I've got the oven on for something else)

We eat a few variations of veg lasagna.

Favourite is when I batch cook a big slow cooker lentil bolognese, freeze the leftovers and use that as the lasagna filling with cheese sauce.

Ditto quorn bolognese.

Or I also make delias spinach and ricotta lasagna. It’s not as complicated as it sounds. I leave out the pine nuts for the DC. Freezes well too.

On Jamie's Instagram today he made a scruffy veg lasagna.

It looks like he makes the veg and tomato sauce, stirs grated cheese and broken up pieces of dried lasagna into it and then bakes.

Looks fabulous.

I make a ratatouille in the morning and cook it slowly. Then leave it and use it to make lasagne in the evening. The ratatouille is lovely because it's always nicer reheated. Sooo good.

I roast ratatouille veg with garlic. Then I mix white miso and tomato puree together, fry in olive oil then add the veg and add water gradually to make a sauce. I'm not quite sure what the miso does but it lifts the flavour so much as opposed to making a sauce from tinned toms.

I batch cook bolognaise style sauce and if I want a quick lasagne, I defrost some! That’s my easiest top tip.

This is fabulous! I don't have a slow cooker so I just slowly roast/stew the vegetables in the oven in a covered pot of n a very low heat for 90 mins. The mozzarella topping is divine and so easy.

My laziest recipe is:

-bag of frozen med veg
-passata or tinned toms
-italian dried herbs (whatever you fancy, I use a premixed tub from costco)

Cook the above, maybe add balsamic, or tsp sugar, until it tastes about right. Sometimes I add garlic and onions at the start, sometimes not.

Layer in dish with supermarket cheese sauce (waitrose and Sainsbury's both aren't too bad for weird ingredients but I don't know if the cheese is veggie cheese) + dried lasagne sheets. Top with grated cheese of choice. Cook.

Is there such a thing as a quick and simple lasagna?

Mine is simple but not quick. I roast a massive vat of veggies - onion, butternut, aubergine, peppers with garlic etc. Usually add tomatoes too. I also make a separate tomato ragu with tinned tomato then add it to the roasted veg. Layer that up with a traditional cheese sauce or use half cheese sauce and half ricotta mixed with spinach.

It's a hassle but i batch cook it every now and again and then freeze in one or two person sized portions as it can also be put straight into the oven from frozen.

I think so! If I use frozen leftover lentil bolognese, and mumsnet microwave cheese sauce, it’s super quick.

From scratch less so!

Delias spinach and ricotta is fairly quick if done with aforementioned cheese sauce and frozen chopped spinach too.

Nadiya Hussain has a mushroom one that’s a bit different but very easy. The recipe makes two at once, one in the slow cooker/one for the freezer but it’s easy to halve or to just do the oven version. We cook it for about 30-40 mins depending on if cooking from frozen.

I use creme fraiche instead of making a sauce and just add grated cheese to each layer

My fave is an ancient rose Elliott..
Fry mushroom leeks and thyme and garlic for one layer, stir chopped spinach into ricotta or coattage cheese. For other layer. Amazingly yum!
