What inspiration do you lot have please for recipes for weeknight dinners which involve some meat or fish or poultry for flavour but really largely loads of veg?

Note: both work FT with two small ones so anything doable in the instant pot - as a one pot meal is particularly preferred!

Favourite cuisine in house is Asian (Indian Chinese Vietnamese Middle Eastern etc)!

I’m on a rotation of Keema pulao, chicken noodles and would like more ideas before this Fridays Tesco’s delivery!

Please make the ideas easy and quick as work and the littles are exhausting us massively.

Spouse also likes leftovers for lunch and I don’t mind these either so anything that can be bulked up is even better!

I no longer eat meat but I used to make this Mary Berry recipe fairly often when I did. It's easy, fairly quick, only uses one oven tin, & can be adapted for different/more vegetables, you could use chicken or another meat if you wanted, & if you have fussy kids it's fairly easy to do one end of the tin with the vegetables & things that they like, & put everything that you like in the other end of the tin. We always did it with just stock rather than wine if we were cooking for DD as well as ourselves. Very adaptable. I always added mushrooms, cherry tomatoes & courgettes, for example. I like lots of vegetables.

We have wraps about once a week because everyone will eat them! I cook chicken or chorizo with onions, peppers and mushrooms in one pan and serve it with salad bits (tonight was lettuce and sweetcorn because that’s all we had in). Everyone just builds a wrap filled with what they like and I add chilli sauce, spicy mayo, etc because my children don’t like spice. I sometimes do rice to bulk it out if needed.
