Does anyone have a recipe for some without fruit?

DS1 has been struggling with breakfast and I'm thinking maybe a nice fresh muffin might be tempting. Maybe? :o

Any help would be brilliant.

Banana bread or Apple muffins, i find you can then cut the sugar as you get sweetness from the fruit. Or there are a lot of recipes for oat breakfast bars. And less sugar than commercially made.

Instead of sugar and fruit you can add bacon, feta and cheddar cheese and spinach.

Or tomato and onion and cheese - anything really.

I tend to think what wouldn't put in an omlette and go with the same options.

Also instead of muffins you can make with whipped eggs - extra protein and really light.

On school mornings he's put off by any big flavors and textures so I think cheese and bacon could be a little too much. They sound amazing for the weekends though.

Again, any sort of fruit in the morning is too overwhelming. Would grating an apple into a plain mixture work to replace sugar?

i've got a really nice zucchini chocolate chip, not much chocolate
i also have done for years a carrot bran which has pineapple in it.
a savory ham and cheese can be as mild as you like based on the cheese type or bacon vs ham.
last but not least is my recent fave of roasted beet root chocolate muffin again low sugar.
my kiddo's grew up with muffins every day...forgot apple cinnamon

Not sure about adding grated apple but bananas are definitely tried and tested and banana bread in muffin cases works well.

Or there's a good recipe here that's pretty plain if you leave the nuts:

We do a spiced carrot muffins. I'd have to track down the recipe as I haven't made them recently but I think they have bran or wholemeal flour in them too - they're lovely and what I like the most is that they freeze really well and then can be defrosted overnight or in the microwave (they actually defrost alone in about 30 minutes too).

They used mixed spice so the flavour is not subtle but we love them. I can track down recipe if that's interesting (I have been meaning to do a batch for DS so this might get me moving to).
