Anyone else think rock cakes are undervalued?

Love them personally.
Not really a sponge cake, cup cake person but rock cakes weirdly I love.
Add in some spice, orange peel, glacé cherries, walnuts and chocolate chips and they are lovely.
Just feel you never really see them getting the love that the nasty icing laden cupcake monstrosities get 🤣

Only when they are really fresh though. They go dry so quickly

Once went to an afternoon tea party with a batch of rock cakes which were left uneaten because someone else brought cupcakes. Sob.

Yup. And Betty's fat rascals. I'd rather have something like a rock cake, scone, or fat rascal than any rich cake with two inches of icing.

I love rock cakes. One of the first things I learnt to bake myself when I was young. Need to be eaten that day, though.

Omg I'd forgotten all about them. I remember making them in school and I hadn't ever had one before. I'd eaten the lot by the time I got home.

Rock cakes were the first thing I made at school! Always love them and also dislike all the icing that’s popular at the moment. I still use my school recipe, which is in my 12 year old hand writing, though nowadays I use butter instead of stork and double the spice…
They take just over 10 minutes to cook.

Haven't had rock cakes since my grandma died, I'd almost forgotten about them, this thread has prompted so many happy memories or standing in her kitchen making up the mix and then peering through the oven door waiting for them to be cooked and nabbing one off the cooling rack while still warm.

You are all right, they are best out of the oven
Might experiment next time and keep a bit of mixture in the fridge for a day or so, see if can cook in small batches,

Here’s the recipe I use,quick as you do the rubbing stage in food processor, though obv you could do by hand, especially if you had little people helping.
I add chopped glacé cherries and chocolate chips
Usually only take about 15 mins in oven as well

I always thought they were called rock cakes because if you don't eat them straight out of the oven they go as hard as rocks 

@Ionlydomassiveones have you tried aquafaba? The liquid around tinned chickpeas. Full of protein.

I'm with you on rock cakes- HATE those horrible sickly looking cupcakes with about three inches of margarine based icing . I like to put a little sprinkle of demerara sugar on top before they go in the oven
