Coconut milk in curry

I am making Thai green curry for tea. I normally use a can of coconut milk but have just realised I’ve run out Sad. I have a carton of coconut milk in the fridge that my son drinks - can I use that in the curry instead?!

We are isolating due to covid so cant pop out and get some more and tesco delivery due tomorrow so the cupboards are a bit bare!

I think it will be ok but a bit runnier

I wouldn't see why not, worst case scenario it's a slight different taste or consistency.

It's just a very diluted version so won't be nearly as rich but will still add some mellowness. If it's too runny, you can thicken it with a teaspoon of cornflour slacked in some of the milk or even some ground almonds, if you have them. They're not part of the recipe but will add the richness you need.

Slaked

Ooo I have ground almonds thanks! Will give it a go and hopefully still have something edible Grin

Brilliant. You can just stir them in.
