If I make chocolate mousse with cream that expires on 23rd will it be ok for xmas?

Sorry - didn't mean to be quite so blunt. You could make it but run the risk of having off mousse at Xmas (highly possible!)

Well, the thing with cream is that it doesnt necessarily last till its expiry, or sometimes it can go well past its expiry and still be fine. The only way to tell is to smell it to see if it's 'turned'.

I wouldnt really want to chance it with mousse though - especially with the raw eggs that usually go with.....

It's Christmas - go spoil yourself and get a new pot of cream

cream wont magiucally get any younger because you have moussed it...

200 g of chocolate, melted in the microwave with a tbsp of water. 6 eggs. Mix the egg yolks with the melted cooled chocolate. Whisk whites until stiff and fold in. Chill for at least 3 hours.

It's yummy. Eggs should be very fresh though.
