Make mixed fruit crumble and freeze it?
Slow dry in the oven and use with cereal?
Cake?

Both are delicious in a clafoutis.
Apricot goes really well with frangipane i.e. in a tart
I usually make plum ice cream when I have a glut in the autumn. This boozy recipe is my favourite but if you don’t have rum then this is good too.

I had a lovely spiced plum tart that was bought but it was like a frangipane tart thing with half plums and then smooth plums under the frangipane. Very winters

@WeatherwaxOn - I did crumble with half and flapjacks with other half - neither particularly healthy but boyfriend liked the crumble last night with custard.

Google "Anna Banana plum and almond cake" - I make it a lot and it's v easy and delicious (and you could sub in any fruit).

Also for savoury options, I've seen a recipe recently for sausages with sticky plums - might have been Nigella? Or Roasting Tin lady? (Rukhmini Ayer)

If you currently have apricots and plums, I’d suggest you are in summer.

Jam. You will need a few lemons halved and thrown in for pectin.

Poach gently and top with meringue and into the oven. Divine with plums.

Look up Georgian recipes. They like fruit with meat.

I’m away from home so can’t give you more.

Tart Tatin. Maggie Beer’s rough puff would be my go to here.

Otherwise, the old fashioned thing of poaching gently and freezing in parts for later.
