how do i make the cases for vol au vents?

Use a pastry cutter to cut circles. With a smaller one, press into the pastry but not all the way.

Brush with beaten egg. Cook. Remove the top of the middle bit iyswim. Does that make sense?

most chefs recommend buying puff pastry as shop stuff is good and is a bugger to make. if you are buying puff pastry you can buy ready cut vol au vonts.

my dad who cooks loads and does mopst from scratch buys them and makes the most delicious filling.

so to sum up - don't make them - probably not what you are after!

alternative I think I got from here - roll white bread until thin, cut out rounds, push into muffin tray (brushed with melted butter) brush with more melted butter and bake.

sounds horrid but works - honest and is nice.
