Leftover Christmas veg

I have LOADS of veg leftover from a family Christmas where everyone basically bought their own vegetables! Green cabbage, red cabbage, sprouts, onions, parsnips.
What can I cook with it that’s freeze-able? I have already used some in a stew. Veg curry perhaps? It feels a shame to throw it all away.

Shred/grate it and make a large pan fried veggie hash. It will break up, but it freezes well and can be added as a side to dishes or for breakfasts on its own/with other bits. Leave out the red cabbage though otherwise it will all turn pink.

Colcannon mash if you have spuds left with your onions and cabbage.

The red cabbage I would slice thinly and braise in apple juice. My mum adds a cinnamom stick while it cooks (which I’m not a fan of). It freezes very well.

The parsnips I would par boil and freeze in portions. They cook really well from frozen.

I'd probably turn that lot into soup, but go easy on the cabbage and sprouts.

I'd make braised red cabbage and freeze it, and parboil the sprouts and freeze them too.

Colcannon with the cabbage & potatoes
French onion soup with the onions, or onion tart/quiche
Frittata or Spanish omelette (not freezable though)
Spicy parsnip soup or apple & parsnip soup
Parsnip & potato mash
Parsnip gratin

I love making a spiced carrot and parsnip soup - it has onion, carrots, parsnips, garlic, stock, cumin and ginger... very warming and perfect for popping in the freezer for a chilly day.
