Want to eat more vegetarian meals but they all seem so carby

I lack imagination no doubt but everything I find seems to be pasta based. I am struggling to find easy low carb veggie recipes - please point me in the right direction:-)

Eggs, cheese and veg. Combine in any way you choose with any herbs or spices you choose.
Sag paneer: all the curries without pulses
Veg frittata
Shakshuka
Etc

I'd also like to know this! Searching for vegan recipes seems even more carb based.

I'm a meat eater but intending to cut down on meat over the next 12 months.

This will mostly be done by making veggie versions of things we like (curry, bolognaise etc) so I suppose I could just eat less of the carb element 😬

I rarely eat meat because I don’t like it and have been the same throughout my life. I just eat what the others are having but leave out the meat on my plate.

Curries and chillies are easy to make and you can pack in lots of veg, beans, mushrooms etc. depending on what you like. Eat with rice, quinoa or just with more veg on the side. Rice made out of cauliflower is also genuinely really nice.

I also make roasted veg or a kind of a tray bake quite often as it's easy. You can add sweet potatoes or potatoes if you like, or just lots of veg and halloumi or feta.

Salads with lentils or chickpeas, veg, mozzarella, tofu, leafy greens.

I'm not a fan of soup personally but if you are, then it's another dish you can pack lots of veg into.

Steamed veg as a side instead of simple carbs - occasionally I have readymade veggie sausages with two or three types of steamed veg.

I love soup! And omelettes! So that's a good start. Everything listed above sounds delicious

DD is vegetarian and not a huge fan of carbs.
She eats curry, salad, Mexican etc. Sometimes with rice or a bit of bread but rarely pasta

Look at vegetable recipes from other countries. I make quite a lot of Japanese dishes with tofu, veg & eggs - really easy, there are good home cooking chefs on Youtube. Their breakfast menus are more like my lunch.

If you google low carb vegetarian recipes you get gazillions of results - 69 on the BBC Good Food website alone. They aren't all super low carb ones aimed at keto dieters - plenty have pulses, some potato etc, no piles of pasta!

I'm vegetarian and ate mainly low carb for a good few years. I ate a lot of stews, soups and stir fries.

There's quite a lot of low carb veggie cook books, including one by the vegetarian cook book queen Rose Eliot.
