Am all out of inspiration! Was thinking brioche baps, slaw and wedges... any other sides you would recommend?

I reckon you want the bread to be crusty ideally - the pork is already soft and sweet-savoury so you want a good contrast in the sides.

No brioche rolls - too sweet. Normal burger rolls.

I normally do wedges or chips, corn on the cob, coleslaw, salad, baked beans and onion rings. Jacket potatoes also works well. Some people like grated cheese in the roll with the pork.

I agree with avoiding any extra sweetness and would go for normal bread rather than brioche, coleslaw without any sweet ingredients and a green salad as well as the wedges. Avoid sweet potato for the same reason. Mustard as a condiment as well as apple sauce. Allow enough rolls for two each.

Proper beans, slow cooked - sauté onion, celery and carrot for as long as you have patience (30 mins min) meanwhile render smoked bacon lardons, add the sautéed veg, garlic, 2 tsp herbs de Provence, tsp paprika, can of mixed beans, can of chopped tomatoes and season, cook on low heat for an hour.

This is what I do with pulled pork. Doritos, grated cheese, salsa and sour cream 😋

Alternatively it's delicious with brioche rolls and full corn on the cobs

Ottolenghi does an amazing red onion and pomegranate salsa which is fantastic with pulled pork. It’s just sharp enough. You can make it in advance and keep it in the fridge.
