Lots of turkey and ham to use up- best recipes?

We’ve all felt unwell with little appetites over Christmas which means the amount of leftovers we have is insane. What’s best to do with a fairly hefty amount of ham and turkey? I’m thinking along the lines of soup or maybe pie? Would be grateful of any good, tasty and preferably easy recipes!

I made turkey pie last night. Cooked a chopped onion in some butter, added the turkey (and a few left over pigs in blankets!), some leftover gravy and then added double cream and a chicken stock cube. Cooked it down a bit, then added sliced potatoes on top. Brushed them with butter and cooked at 180 for an hour.

Was delicious!

I've literally just made this, it's in the oven now: www.bbc.co.uk/food/recipes/chicken_and_tarragon_pie_93074

It's really lovely, I make it quite often with our roast chicken leftovers.

I made curry... a lot of portions for the freezer. Also used turkey in fajitas.
I would try and get it all into the freezer as it's been hanging around now. I try to get rid of it all on day two and freeze it. Hope you are feeling a bit better.

Just made the Hairy Bikers chicken and ham pie, obviously, substituted turkey for the chicken. Absolutely delicious and half is now in the freezer!

Turkey cooked on Christmas Day should already have been binned by now.....

Itonlytakesonetree · 29/12/2021 11:14

Can you freeze it for sandwiches/curry/to go with chips etc another time?
If making a pie I would usually chop the meat, and add to a sauce made as per white sauce but with stock not milk. Add on any veg that work if wanted. Top with ready made puff pastry and cook.

Starcaller · 29/12/2021 11:17

Hairy Bikers chicken and ham tangle pie is nice if you have some puff pastry and creme fraiche.

We had turkey and ham risotto last night - used up quite a lot of it (3 of us eating), I'm planning eggs benedict for brunch, using up most of the remaining ham, and tonight it'll be the classic turkey curry, and we're done, I think.

It's only been four days. If it smells good it's fine to cook it into meals and freeze today.

We're going to make a few turkey and ham pies for the freezer today.

Leftovers pie: small can of chicken soup to which I add diced turkey, ham and bacon and fried onion or leek. Heat it through and then pour into dish and top with mashed potato (or bubble and squeak). 20mins in the oven to brown the top. Awesome!

AlbertBridge · 29/12/2021 12:25

I stripped the turkey carcass and simmered it for 4 hours in a ton of water with carrots, leeks and peppercorns.

Then I strained it.

Then I sautéed more leeks and carrots, a red pepper and some raw cabbage in a pan with some garlic. Added pearl barley, herbs, 3pints of the stock, and simmered it for 40 minutes. Then added chopped-up turkey and simmered it for 10 more minutes.

It's the nicest soup I've ever had, plus it feels like it's really good for me. I've frozen it in portions and am having one every day.

Theunamedcat · 29/12/2021 12:28

I've shoved it all in the freezer for when I'm well again but your pie ideas look fab

OldaRailer · 29/12/2021 12:29

I get fed up and freeze it.

Yourheartwillleadyouhome · 29/12/2021 12:29

I made this and it was delicious!

@SushiGo I didn’t believe you so I googled it - you are right! How did I not know that 😬

Just made a long Turkey pasty with a ready roll shortcrust. I fried off garlic and chopped Brussels and peas then added some Campbell’s condensed chicken soup and some single cream. Seasoned it and chucked the Turkey in.
It has made a long pasty that will be cut up to feed 4 with dauphinois potatoes.

I did a potato bake for lunch today using leftover ham. Delicious!
Peel and cube some potatoes, i just used 3 medium ones as was all i had . Then added in some chopped ham and frozen peas. Poured in about 100ml or so cream and a chicken stock cube in about 100ml boiled water. Dont put so much liquid that its covering everything. I used my oval pyrex dishband put lid on. Into oven for an hr or so til potatoes cooked. Give it a good mix through at half way point.
