Tried and tested Beef Wellington Recipe ??

Making it for the first time.

So many recipes online, all with a variation of onions, shallots, pancetta, ham, pate.

Anyone with a favourite recipe they would be happy to share !

I like Gordon Ramsay’s version.

Watching with interest

I did Gordon's and it worked

I decided against the Gordon Ramsey recipe as wasn't sure about the Parma ham.

I choose Felicity Cloakes' recipe, I didn't use porcini mushrooms, used dry white wine instead of the Madeira and didn't bother with the poppy seeds,

It tasted absolutely amazing !! And was surprisingly easy to make, I used a meat thermometer and it was cooked to perfection.

It was a huge hit and looked very impressive !

500g beef fillet
10g dried porcini
2 shallots
300g mixed mushrooms (eg, chestnut, oyster, and shiitake)
50 butter
1 sprig thyme, leaves picked
200ml madeira
2 tbsp double cream
Salt and black pepper
1 tbsp vegetable oil
250g all-butter puff pastry
Flour, to dust
1 egg, beaten with a dash of milk or water
1 tbsp poppy seeds
