I batch cook lentil and vegetable lasagne. It’s always handy to be able to pull a meal out of the freezer and zap when you don’t feel like chopping and cooking.

This is nice. I use soaked red split lentils though as I don’t like Puy. Even meat eater DH likes this.

Sometimes I will have veggie sausages & potato of some sort or a just a jacket with baked beans & cheese. It does get a bit samey sometimes but that’s down to my time/energy/inclination limitations.

Egg fried rice is a winner here

We always have ingredients for Quorn tacos in the freezer / storecupboard

Macaroni cheese is easy if you use a powder sachet sauce type thing

Mac and cheese, lots of pasta dishes for quick, veg stir fry, thai curry and rice, wraps with kidney beans - I use a kit sometimes but add guacamole and rice etc

Parmesan isn’t vegetarian.

Thai curry and rice

Lentil bake -
Layered of sliced raw potato, Sikh Ed raw onion, dry red lentils in a dish. Cover with Marmite stock, put a lid on, bake at 200 for an hour.

Tacos/burritos/nachos with refrigerator beans

Lentil spag Bol (replace mince with red lentils or a tin of green lentils)

Spagetti bolonaise made with finely chopped mushroom, red lentils, grated corgette& carrot and red pepper & lots of stock, really really nice.

Taco/fajita night with lots of chili and sides.

Easiest that I do all the time is roasted vegetables, usually cubes of aubergine, courgette, butternut squash, garlic, brussel sprouts drizzled with plenty of olive oil, paprika, mixed herbs, sometimes honey. And then cut some little cubes of feta (or halloumi) and put on top for the last 5 minutes

Stuffed peppers- veg, bulgar wheat and spices

Sunday dinner without the meat
Chinese or Indian
Mushroom carbonara

Btw veg is usually- onions, mushrooms, courgette, aubergine, sweet potatoes, peppers and garlic.

Not specific recipes but:

Soup
Omelettes, shakshuska, Turkish eggs, frittata etc
Stir fry with either rice or noodles
Jacket potatoes with beans and cheese, slaw, salad
Pasta or risotto
Grain salads
Roast veg and feta
Mushrooms stroganoff
Stuffed peppers

We eat veggie 4-5 nights week and the above allows plenty of variety without too much work

Asian veg stir fry with halloumi.
I just buy frozen stir fry mix, add some shredded halloumi and cashew nuts. I either use some ready made stir fry sauce or a soy sauce mixture.
I don't eat any meat so this is a helpful thread for me too.

Jackets with veg chilli, or cheese and beans

Enchiladas (packet kit) with jackfruit, extra refried beans

Bubble and squeak with eggs and beans/coleslaw

Egg and chips! with garlic fried mushrooms and / or beans.

Ploughman's works well but I never fancy it unless it is hot weather.

Veg and halloumi in yogurt and spices, skewered and bbqd. I'm sure I could cook this indoors too!

Hanging around for ideas, I would enjoy being more creative without putting off a somehwat traditional flavours DP.
