Nigella's clementine cake

I have large quantities of generic "easy peelers" in the house. Can I use them to make Nigella Lawson's clementine cake, which I've always fancied having a stab at?

Absolutely! It’s a great cake, very easy to make. You will need 6 (I think) eggs and ground almonds, among other things, but I see no reason why easy peelers wouldn’t work with this.

The recipe says you need to boil the fruit for 2 hours, but I’m pretty sure if you Google it you can find a much shorter microwave version.

It’s also super with chocolate grated over the top of the cake as soon as it comes out of the oven and allowed to cool in the tin.

Definitely. But do boil the fruit as per the recipe. The best thing about it is that it makes the house smell delicious.
