I need inspiration! DH and I wanted a seafood platter but can't order one anywhere that doesn't cost an arm and a leg and way more than its worth.

We used to make Sri Lankan fish/seafood curry pre children as a tradition. Quite fancy it, but DH doesn't.

Looking for inspiration! We also have a toddler and a newborn so I'm torn between wanting something delicious but not wanting too much hassle in the kitchen!

Steak is what I fancy but I bought a Thai curry kit so might have that

Monkfish tails wrapped in parma ham, boulangere potatoes, some green veg. Friend is bringing a starter. Either cherry clafoutis or panettone bread and butter pudding afterwards. I've never made the monkfish recipe before so I hope it works.

Chilli, rice and garlic bread.

Patatas:
Serves 4. 12 small potatoes, unpeeled, cut in wedges
2 tbsp olive oil
1 tbsp white wine vinegar
1 clove garlic
1tsp chilli powder or Worcestershire sauce
Pinch of hot paprika
Salt.
Boil pan of water, par boil spuds till tender. Drain, cool, then peel and slice or dice. Mix other ingredients in bowl, pour over hot potatoes, season with salt, serve hot.

I don't do this! I cube peeled potatoes and roast in oil till crisp then pour over mixture, delicious.

Mushrooms:
Sunflower oil
Button mushrooms
Salt
3 cloves garlic, chopped
Chopped parsley.

Oven at 180 fan. Divide mushrooms into ramekins or cooking dishes, pour over sunflower oil. Add salt and garlic. Put ramekins on baking tray and bake for 5 mins. Increase oven temp to 220 and bake, shaking occasionally, for 10 more mins. Sprinkle over parsley.

Chicken brochettes with spices and honey ... makes 6. I'd halve this for 4 of us.

Juice of 4 lemons strained
4tsp curry powder
2tsp paprika
2 tsps ground cumin
2 tsps ground ginger
1 star anise
3 tbsp honey
565g cubed chicken breast
1 red pepper cut in chunks
1 onion cut in large pieces
Olive oil to brush pan
Cooked basmati rice to serve

Mix lemon, curry, paprika, cumin, ginger and star anise.

Heat honey in pan then add spice mixture.put in bowl with chicken, stir to coat. Marinate 10 mins.

Skewer meat and veg, griddle 15 mins in hot pan brushed with oil.baste with remaining marinade. When cooked pour remaining marinade in hot pan and let caramelise before pouring over kebabs. Serve on rice.

From 'Quick and Easy Spanish recipes' by s & I Cortega.

So many good ideas, love the idea of duck too, one of my favourites!

Thanks @gerbo that's so helpful! I love the patatas bravas recipe in particular as I thought they'd call for tinned tomatoes which my toddler isn't keen on but that recipe looks super easy and delicious.

I went shopping today and will do:

  • cured meats and olives
  • patatas bravas
  • garlic mushrooms
  • pan con tomate
  • spinach tortilla (shop bought)
  • spicy garlic prawns
-clams in white wine

Can't wait!

Also bought baba ganoush, not Spanish but I love it!

Wish I'd bought chicken for those skewers now, let's see if I can face the shop again tomorrow.

Happy new year!!!
