Once we've finished all the Christmas goodies, I want to make a focused effort in January to undo some of the damage done over the festive season and hopefully lose some weight as well.
We normally eat fairly healthily anyway but I just want a focused effort for a few weeks.
I don't want to 'go on a diet', I don't want to remove all carbs etc just lighten and freshen the meals to achieve my aims without feeling like we're all on a diet.

So things like veg heavy stir fries; fish dishes with tomato based sauces.
Salads fine as a side dish or even a main course but mainly looking for warm meals given the time of year. We love our food so I want us to really enjoy the meals as if we weren't trying to eat super healthily.

Do you have any special recipes that fit the bill please? Thank you

I’ve just written a menu plan for the first week of Jan once everyone is back to school/work. I didn’t write it with the aim of being particularly healthy but it is pretty good. I think I was just craving some less rush meals after the Christmas period.

Baked falafel, Moroccan cous cous and salad.
Paprika chicken tray bake (chicken breasts, peppers, courgette, red onion, baby new potatoes.
Root veg casserole with broccoli and green beans
Shakshuka
Chickpea, cauliflower and red pepper curry.
Gammon with chilli and pineapple relish, sweet potato wedges, peas and grilled tomatoes.
Baked Tuna, sweet potato, chilli and red pepper fishcakes, home made apple and yoghurt slaw and corn on the cob.

I tend to do dishes where it’s easy to add or remove carbs to suit different preferences.

This week I’m making and big veg and bean chilli with fresh salsa and guacamole.
Lemon and garlic chicken skewers.
Chilli, ginger and lime salmon with Stir fry veg, rice noodles.
New Year’s Eve I’m doing balsamic tuna steaks.

Thai curry but with a side of veg and small portion of boiled rice
Salmon veg and baby potatoes

Cod with soy sauce and orange, noodles and stir fried veg.

Chicken curry made with chopped tomatoes.

Tacos with lean mince cooked with veg, taco shells and loads of salad.

I have a soup maker and love to chop whatever veg is in and put it in there for a quick healthy and tasty lunch. I make lots of vegetable curries and get frozen fruit to have with yoghurt or stirred into porridge for breakfast.
