Soup carrots parsnips

Hi would anyone have tried and tested soup recipe. I have a big bowl of carrots and parsnips especially for this, onions, garlic, ginger, coconut milk and cream, bouillon, red lentils, chickpeas, many spices, lots curry based - I feel like we have almost everything spice wise but probably missing the obscure ones. Open to Indian or thai style or tasty, we've lots of chillis, also potatoes. Veggie friendly. Plan to make on boxing day in the slow cooker. Open to ideas please. Taste punchy flavour is good.

I love this one and make it at least once a month. I like to add chilli flakes and garlic to the recipe and then top each bowl with a little lemon juice and fresh coriander before serving.

I’ve made a big vat of it this week and have been using half parsnip/ half carrot. I don’t bother with grating them, just chop and cook a bit longer.

I personally think the taste is improved by adding a few more spices. You could take this in a more Indian inspired direction, by adding curry powder, ginger etc.

Alternatively, I’ve found that adding lots of garlic, a tablespoon of harissa and half the cumin and coriander gives a really tasty spicy soup. That’s probably my favourite option, but clearly it’s a versatile recipe!

I regularly make the spiced carrot & lentil soup from the bbc good food website, everyone always seems to enjoy it. I don’t put the oil in as it doesn’t need it.

This,sweat onions, garlic,add little ground black pepper,carrot/parsnips,(chopped fine) veg stock cube, around 500mls water,AND (secret ingredient,tell no one) 1tbs marmite. Simmer till soft,I put mine in a blender. The anti marmite brigade are not informed,it just gives it a little kick
