Boxing Day Meal. What are you all having, need some inspiration please!

We will have had turkey and all the trimmings on christmas day. DH's parents are coming on Boxing Day and I am running out of ideas about what to serve up for a main course and pudding. I don't want to do anything too fiddly and time consuming.

We are having chicken as follows

Get some chicken thighs, skinned
Put in lightly sprayed glass dish or similar
Sprinkle with salt, pepper, thyme, basil, oregano and fresh parsley.
Slice an onion and arrange slices on top of chicken.
Pour over a can or carton of passata.
Sprinkle with parmesan.
Bake about 45 minutes about 200C
Serve with salad and garlic bread.

Dead easy and YUM.

On Boxing Day we have my parents, my brother, my sister and her boyfriend and PILs round.

DD has requested sausage and mash so that is what I am doing. Have ordered a selection of suasgaes, inc veggie for me, and will do them with mash, roasted veg, Yorkshire Puddings and onion gravy.

We always have the leftovers on boxing day and I like it better than xmas day.

We have cold turkey and stuffing
Cooked Ham
Pickles and picallili (sp?), beetroot, red cabbage etc
Chips

Turkey (and pancetta) risotto probably. Uses up all leftovers and stops the thought of 'em becoming overly depressing.

Thanks. Some good ideas there. I like the sound of turkey risotto. DH wants to cook a ham, so we could have that with cold turkey and the pickles as you suggest mosschops.

We have sausage and mash at least once a week Hulababy. I fancy something different(but easy) as it's christmas.

I don't think I could cook chicken whilst the turkey's still hanging around.

Any other ideas?

i always use leftover cold meat, roast potatoes, salad, crusty bread, cauliflower chesse. Bit of a help yourself buffet!

For lunch I have made(and frozen) a smoked haddock and saffron tart, a mushroom and gruyere tart and butternut squash soup which we will have with salad and freshly baked rolls. In the evening we are having lamb fillet with leek puree and rosemary sauce with sautee potatoes and panatonne pudding (bread and butter pudding made with panatonne)
