Veggie Xmas Dinner Main Recommendations?

For 2, to go alongside a roast beef dinner and a turkey roast.

They eat eggs, dairy.

Preferably to make in advance and reheat without damage.

Lidls veggie specials are good! If you really must make from scratch and have the time Delia Smith's Parsnip Roulade is wonderful. Personally I'd make life easy and go to lidl or aldi.

I’m going to defrost some Linda McCartney sausages and mix together with crushed mixed nuts, chestnuts, chopped and gently fried onion and garlic which I will pack into a loaf tin and bake. I’m going to serve that with a tomato sauce but a veggie gravy would work too. Everso easy and tasty and suitable for vegans to boot.

This lentil roulade is really good - I usually have to keep the meat eaters away from it until the non-meat eaters get their fair share. It can be a little fiddly to make the first time around but can be prepared well in advance. It is a bit on the dry side so it does need gravy or sauce. I use tinned sweet pimientos instead of chopped red pepper - the taste is more delicate. Any leftovers are great in sandwiches with some chutney.
