I have a huge pack of sponge fingers and thought I'd do a Charlotte russe for Christmas except I have no gelatine and won't be going to a big supermarket to get one. Thought I might me able to use jelly. Has anyone done this or have a recipe that uses sponge fingers, don't want to do a tiramisu as have a few children coming.

You can do trifle with sponge fingers, some tinned fruit, jelly on the bottom and custard on top. With or without cream on the very top. We always have jelly in our trifle.

You can whip cream into liquid jelly, before it sets to make a jelly flavoured mouse. I think that is the filling for the desert you are after.

Well, 1 pack of jelly into a mean half pint of boiling water, then add a tin of evaporated milk....
So id guess similar amount of cream?

Thanks I'll give it a go, will layer with a raspberry compote, I'll let you know how it goes.

Just an update, boring I know but I've made a strawberry tiramisu, marscapone vanilla cream layered with strawberries and boudoir biscuits.
