Cakes for Xmas eve & Boxing Day - freeze or just wrap in clingfilm??

I've got 2 carrot cakes for Xmas eve and Boxing Day. Undecorated at this point.

Should I freeze then defrost overnight before putting cream cheese frosting on? Or just double wrap in clingfilm in cake tin???

My carrot cake is in the freezer, pre-icing, and will be taken out the night before we want to eat it.

I'll be baking and freezing Victoria Sponge and various other things today, which will also be taken out to defrost the night before.

I find cake is actually nicer, softer and more moist when it's been frozen and defrosted!
