Can I use beef dripping to make a roux for gravy?

Just that! Can I substitute the butter for beef dripping and mix it with the flour to make a roux or will it not work? Has anyone made gravy this way?

Any fat will work. Makes no sense to use butter when you have beef dripping which will taste better.

Of course - I always use the meat fat and have never used butter.

All the recipes I’ve seen use butter.

Unless you have a big enough roast to provide lots of juices/fat you have to improvise!
