Best ever sausage roll recipe

I want to make some sausage rolls for Christmas Day/Boxing day can you give me your best recipe please?

Waitrose all butter shortcrust pastry (from freezer, defrosted) and their sausage meat

Combine, cook and enjoy.

I prefer puff pastry but DH is convinced that shortcrust is the way to go.

I love this giant sausage roll but I think it would work as mini ones

If making the giant one I find I always need much more pastry than it says

If you want to break away from tradition try sweating some red onion with sage a finely chopped pear. Add sausage meat and crumble in some Stilton. Then make into sausage rolls using puff pastry. Always go down a storm here.
I also like to make a regular sausage roll but spread a layer of cranberry sauce on the pastry before adding the sausage meat. Adds a lovely festive sweetness.
