Peel and chop, place in an oven proof dish with knobs of butter and cumin seeds - lush !

roast them
toss them in bit of butter and parsley
mash em up with parsnip and a pinch of cumin
stirfry in batons with garlic

Seriously though try this

3 cups sliced carrots
1/4 cup honey
2 tbsp. butter or margarine
2 tbsp. chopped fresh parsley
1-1/2 to 2 tsps. mustard
Heat salted water in saucepan to a boil . Add carrots, cover and cook 8 to 12 minutes or until carrots are crisp-tender. Drain carrots; return to saucepan. Stir in honey, butter, parsley, and mustard. Cook and stir over low heat until carrots are glazed.

Slice carrots finely. Put in pan with a dollop of butter, a crushed garlic clove and a teaspoon of sugar. Put in just enough water to cover them (you don't want too much water), bring to boil then simmer until cooked. They are delicious - sweet and buttery with a delicate garlic flavour.

we are having carrot and swede puree with tarragon.

carrot, swede, butter, dbl cream , lemon juice and fresh tarragon

we add a spoon of maple syrup to ours, then steam or boil. Rounds this year, last year we had frozen baby carrots.

don't boil - they lose all their vitamins and minerals and taste bland. Roast them in oil olive and season well for about 30-40 mins. Also best to leave the skin on (obviously wash well or use organic carrots) as the skin has a lot of nutrients in it. I never liked carrots when I was growing up and now I realise it's because of how they were cooked - soooo much nicer roasted - sweeter and juicier! enjoy!

Sprouts are good lightly steamed then panfried with pancetta, pine nuts and lemon zest.

I'll be steaming mine, they taste miles better than boiled. I used to boil all the time but never again.
