I have online ordered 4 punnets of tomatoes Blush the pomodorino ones
Any ideas on using them up?!
I got them for in omelettes and salads...
I eat anything except steak, offal and pistachios

How about that feta and tomato sauce that went viral on Tik tok a while back? Serve it with pasta. Put tomatoes in roasting tin with a block of feta in the centre. Drizzle with some oil and then, around 40 minutes after baking, the tomatoes have collapsed and the cheese is very soft. Stir it all together.

Oh yes! I have feta.. well "salad cheese" as they had no feta so it might be better off in pasta

I should add I have just done a full food shop so I have most stuff on hand
Avocados, halloumi, pancetta, pasta, potatoes, salad, usual stuff

Slice them up for a salad. Chop up fresh basil and mint and sprinkle over.

Sliced tomatoes, tiny drizzle of olive oil, fresh thyme and seasalt is the best tomato salad ever.

Also, how about a fresh tomato and pepper slow cooked all'arrabiata sauce for pasta with lots of chilli and garlic? Or a puttanesca sauce?

I take it this is an "I forgot to update my delivery properly" thing?

I've done that!

I've also failed to secure a Christmas delivery slot so I've now got nearly 2 weeks between orders!

I also ended up with a load from a lockdown delivery snafu once and wise mners pointed me in the direction of home made "sun dried" tomatoes which is a way of preserving them.

Making dishes/sauces that freeze well is an option too

There's also

Tray bakes
Soup (soup is great for using up most veggies!)
Stews/casserole/curry/chilli
Ratatouille (which is really just a very nice veg stew. Freezes great and can be used as a pasta sauce, topping for baked potatoes etc)

Loads you can do with tomatoes - could be worse!

I've also bought Apple strudel mincemeat Hmm
They last pretty well too so it definitely could be worse

I've learned from my own deftness:

Update well in advance (admittedly this isn't just my daftness but tescos! Couple months back their entire system went tits up due to an attempted hack!)

Check what I've ordered and don't just do the adding thing

Check subs choices and notes

Check the time (I usually choose the same time slot but occasionally if I can't get that time I book another...and forget!)

Online ordering can be TOO easy at times GrinGrinGrin

I've made this more times than I can count, it's really delicious! I just use whatever kinds of tomatoes I have going (not always cherry tomatoes) and a big handful of rosemary from the garden.

No worries. It freezes well so I often make a double portion and then freeze individual portions.

If you have an instant pot or multicooker, if you reduce the liquid a bit then it cooks really well in one of those. If it's helpful I can check how much I reduce it by normally.

Today's breakfast was
Avocado, feta, balsamic and a shed load of tomatoes on toasted sourdough. Delicious, will be having that again tomorrow and it used up a good amount!

warm tomato salad

chop tomatos into bitesize chunks
cook rice according to instructions
mix hot rice with the tomatos
stir in a tub of sour cream or creme fraiche or cream cheese
herbs to taste, like chopped fresh basil, oregano.
season to taste

Do you have a freezer? If so I would make some tomato sauce to freeze, it is so useful for many things. I usually chop onion and garlic, add the tomatoes (chopped or not, doesn't really matter) olive oil and some balsamic vinegar/Worcestershire sauce, salt and pepper (and some herbs if you like/you have them in the cupboard) then roast on low for a few hours.l You can either keep it chunky or blitz until smooth.
