I use nigellas Russian fudge recipe, it's amazing! I soak raisins in rum for a couple of days until the rum is completely gone and they're all swollen and delicious. Then at the beating stage add a couple of tbsp of rum, and when fudge is nearly set chuck in the raisins. Some stay whole and some get mushed up a bit with the last of the beating, absolutely delicious!
