I've decided I'd like to make a birthday cake for my little boy in a few weeks. I don't have much experience of baking though!

Does anyone have a good and easy to make recipe for a Vanilla like or chocolate cake that is enough for 20 people please that they are happy to share? I've been searching the internet but can't find any that make the right quantity!

I know I'm challenging myself a lot! But I have time to practice luckily

For 20 people a 20cm cake tin is recommended. Use 4 large or 5 medium eggs, weigh them in their shell, then use the same quantity of self raising flour, real butter and sugar. Cream the butter and sugar until pale, add the eggs and then stir in the flour. Don't overwork it once the flour is added or the cake will go gummy. I would split the mix between two tins if you want to fill the middle. You can add some vanilla extract if you want, I would just flavour the icing :)

Try Nigella's birthday custard sponge. It's really easy to make and you could easily double it to make enough to serve 20. You'd need big cake tins though.

I think you’re going to have to use the trick of having a second cake hidden out of sight in the kitchen. Bring out one cake with candles for your son to blow out, take it back to the kitchen to cut while everyone else carries on doing their thing, and bring back a tray with both cakes cut into slices.
