What shall I cook for vegetarian guests that I, as a carnivore, will also enjoy?

Big dish of different types of roasted veges (cut in 1-2 inch cubes). Roast with olive oil, garlic, onion and rosemary. Serve with hoummous, crusty bread and steamed greens or a salad. I love my meat, but this is tasty.

i have a great recipe with roasted red peppers and spinach in a cheesey (parmesan) sauce topped with bread crumbs and pine nuts. Great with baked potatoes.

You could try a recipe from Nigel Slater. Place a piece of goat's cheese on a square of puff pastry. Put a dollop of pesto on it then bring the corners together and bake.
