A friend gave me this recipe and I am going to try it today for a lunch guest. I don’t have any baking beans so was going to try red lentils and grease proof paper (what sort of quantity of lentils do I need please). Also at what temperature would you serve this quiche please?
Thanks

I never bother with baking beans, just follow Delia who pricked flan case all over with a fork and precooked it foe about 5 mins brushed with egg before adding filling. I would serve this just warm as it settles with cooling. Sounds delicious

Does this look right. I used the lentils but the pastry has still risen? X

Next time you cook a pastry case, line the pastry so it overhangs to edge by a cm or two during the baking then trim once cooked, will mean there's spare for any shrinkage. It's a Jamie Oliver tip not mine I admit. Rice works well instead of baking beans and can still be cooked afterwards for zero waste
