Can anyone tell me what "all purpose flour" and "shortening" are in English??

"Canola" oil was first marketed widely for huge health benefits in the USA about 17-20 years ago.

Says the native Californian. I always thought the name "rape" as just considered too offensive and thus Canola was made up....
