I haven't made that but I did make Ottolenghi's mushroom pilaf from their new shelf love cookbook. Can highly recommend! We hD it with sautéed greens and raita (make with coconut yoghurt to keep it vegan).

Yes! Both me and DH loved the mushrooms (neither of us vegan). I liked the butter beans, DH bit more meh on those but served them with potatoes and lentils as well in past. Also served a yogurt sauce with it, obviously you'd need to do vegan alternative if you wanted to do this (it helps temper the spice as it can get fierce depending on chilles used)

Thanks both! @Littlebelina I thought about polenta instead of butter beans. Question: do you reckon I could get away with assembling the mushrooms just before the guests arrive? Or would they go rubbery or something?

@revampneeded what about celeriac mash? I just add salt, pepper and nutmeg, makes a really smooth creamy mash.

I'm vegetarian, haven't tried this but would be over the moon to be served it and think ill probably cook it at some point now i know about it!

i can't remember what we had alongside but I would guess something like purple sprouting broccoli, possibly with some flaked almonds and a hint of chilli flake?
