Salmon

DD13 and I have salmon at least twice a week and usually it consists of:

  • salmon fillet (with whatever herbs and spices we have in) wrapped in foil in the oven
  • potatoes, either mash, chips or roasted
  • veg, often peas and broccoli as DD loves them

What else can I make that is quick and easy but not variation of the above? We've done salmon fish cakes in the past, but don't fancy those today.

We do a nice oyster sauce, garlic, ginger, soy, spring onion marinade; bake in the oven. Then serve with stir fry veg and optional noodles. One of the few meals everyone, even the fish haters, will eat.

I was going to suggest noodles as well. Mine is a simple marinade of soy sauce, honey, garlic and ginger. Stir fry veg and noodles and add the marinade. Fry salmon separately and serve with noodles and veg on the side.

Cooked salmon and broccoli and peas stirred through pasta with a little cream cheeseand pesto or creme fraiche and lemon zest.

Mix cream cheese with parsley and lemon, Coat salmon and wrap in pastry. Cook for 18-20 minutes at 200 degrees. Delicious!

Cook some spinach and let it cool
Squeeze out excess liquid
Soften some Boursin in a bowl
Add the spinach and mix
Plop the spinach and cheese mix onto the fillets
Place inside a scrunched up filo pastry parcel
Brush with some oil or melted butter
Bake

I put some jerk bbq sauce on salmon....serve with mac and cheese and coleslaw

Delia recipe I think. Mix green pesto with breadcrumbs and spread on salmon fillets. Mid Parmesan with more bread crumbs and a little olive oil and spread on top. Bake in hot oven for around 15 mins. Lovely Smile

It's not massively different but I tend to do it in a pan with a bit of butter and oil, and do the skin side until it's crispy. With rice and veg. I think rice with salmon goes well.
